TRICOLOR PASTA WITH GUACAMOLE SAUCE

Ingredients

1 pack of Arbella Plus Tricolour Shells

3 ripe avocados

1 red onion (finely chopped)

Juice of 1 lemon (or 2 limes)

1 tomato (finely chopped)

2 tbsp olive oil

1 green pepper (finely chopped)

1 red pepper (finely chopped)

1 yellow pepper (finely chopped)

2-3 tsp tabasco

Salt

 

Directions:

 

In a large pot of salted water, boil pasta according to package instructions and drain. Mix with 2 tbsp of olive oil and set aside to cool.

Scoop out ripe avocados and mash into a paste. Mix with chopped peppers, onion, tomato and lemon/lime juice to make guacamole. Pour guacamole over pasta and serve. Bon appétit!
