PASTA WITH GOAT CHEESE AND DRIED TOMATOES
1 pack of Arbella Plus Tricolor Pasta
200g dried tomatoes
200g (2 cups) goat cheese
50g pine nut (chopped)
1 onion (medium-size; finely chopped)
4 cloves garlic
1 tbsp butter
2 tbsp cider vinegar
1 tbsp tomato paste
1 sugar cube
1/2 cup pasta water (from pasta-boiling step)
2 hours before cooking, submerge dried tomatoes in olive oil in a bowl and set aside to soften. Drain after 2 hours and set this oil aside.
In a large pot of salted water, boil pasta according to package instructions and drain, saving 1/2 cup of this water for later.
Take 2 tbsp of oil from the set-aside bowl and heat in a pot. Add finely chopped onion, garlic and tomato paste and stir. Add sugar cube, cider vinegar, pasta water and dried tomatoes and cook at medium heat for 2 minutes. Mix pasta with this tomato sauce. Stir pine nuts in butter in a separate pan. Pour pasta onto plates and decorate with goat cheese, dried tomatoes and pine nuts. Serve. Bon appétit!
